margarita cupcakes ♥

these cupcakes were a big hit at our get-together this weekend!


like what you see? here is what you will need :o)


cake
1 box of white cake mix
3 egg whites
1/3 cup of vegetable oil
1 cup water
1 tablespoon of lime zest (fancy name for grated lime peel)
1 cup of margarita wine cooler (key lime juice works well too)

icing
1 stick unsalted butter (softened)
1 package cream cheese (softened)
4-6 cups of powdered sugar
1 cup of key lime juice
1 tablespoon of lime zest

step 1: pre-heat oven per instructions on back of box
step 2: stir the cake mix, egg whites, water and vegetable oil together.
step 3: add in the lime zest and wine cooler, stir until blended.
step 4: fill each cupcake paper 3/4 of the way full
step 5: bake according to instructions on box (about 16 minutes)

while cupcakes are cooling you can start mixing the icing

step1: blend butter, cream cheese and key lime juice together slowly (butter and cream cheese need to be softened for it to blend properly)
step 2: stir in powdered sugar and lime zest (blend all ingredients together until smooth)

now you are ready to ice the cake! this is the fun part. what i did was fill a plastic baggie with the icing so it would be easier. after i sqeezed the icing onto the cakes i used a spachula to spread the icing evenly. i then added a lime wedge on top of each cupcake to give it a fun look.
