yay tax season is over!

well it is finally april 19th which means that tax season is finally over! i haved worked 50 hours a week for the past 4 months so i am definitely ready for a break. now i can finally finish planning my wedding and start baking more cupcakes :o)

girl's night in

every girl deserves at least one girl's night in every week. we need time to ourselves to be girls and not worry about what others think. everytime a girl hears the word "girl's night" they automatically think chick flicks and popcorn, and maybe a girly cocktail, but why not put a new twist on girl's night. i found a greate article by apryl duncan from the website about.com with some cute ideas for girl's nights in. check it out!

Spa NightThe bags under our eyes are cruel reminders of how little time we have to indulge ourselves. Have the ladies come to your house for some much-needed mom pampering in their bathrobes. Give each other facials, manicures and pedicures.

margarita cupcakes ♥

these cupcakes were a big hit at our get-together this weekend!


like what you see? here is what you will need :o)


cake
1 box of white cake mix
3 egg whites
1/3 cup of vegetable oil
1 cup water
1 tablespoon of lime zest (fancy name for grated lime peel)
1 cup of margarita wine cooler (key lime juice works well too)

icing
1 stick unsalted butter (softened)
1 package cream cheese (softened)
4-6 cups of powdered sugar
1 cup of key lime juice
1 tablespoon of lime zest

step 1: pre-heat oven per instructions on back of box
step 2: stir the cake mix, egg whites, water and vegetable oil together.
step 3: add in the lime zest and wine cooler, stir until blended.
step 4: fill each cupcake paper 3/4 of the way full
step 5: bake according to instructions on box (about 16 minutes)

while cupcakes are cooling you can start mixing the icing

step1: blend butter, cream cheese and key lime juice together slowly (butter and cream cheese need to be softened for it to blend properly)
step 2: stir in powdered sugar and lime zest (blend all ingredients together until smooth)

now you are ready to ice the cake! this is the fun part. what i did was fill a plastic baggie with the icing so it would be easier. after i sqeezed the icing onto the cakes i used a spachula to spread the icing evenly. i then added a lime wedge on top of each cupcake to give it a fun look.

time to bake

so my fiance and i are hosting our first "wrestle mania" party tomorrow night... yes i said wrestle mania. anyway in between cleaning house and getting ready to deal with crazy men i am going to attempt to bake my first batch of cupcakes. with springtime in full bloom i am getting excited about summertime and what better way to spend a hot summer day than with an ice cold maragita on the rocks?? so tomorrow while my fiance and his friends are watching wrestling i am going to be turning one of my favorite drinks into a cupcake.


hopefully mine turn out to look this good!

oh goodness here we go...

it seems like blogging is the it thing to do these days so i thought i would join in the fun! i have wanted to start blogging for quite some time now, so the fact that i have actually sat down and finally created my blog is a huge step.
