sundried tomato basil pasta

changing it up a little bit today.
why? because i'm hungry!

today i'm going to share one of my favorite recipes with y'all!
for those of you who don't know me, i'm a bit of a pasta addict.
it's pretty bad.  i consider myself the carb queen.

sundried tomato basil pasta

what you will need

1 box of pasta (any kind will do)
3 boneless, skinless chicken breasts
minced garlic (about a teaspoon)
olive oil
butter (about a teaspoon)
1 cup heavy cream
1-2 cups sun dried tomatoes, chopped
1 cup chopped basil
salt & pepper to taste

here's how you'll make it

prepare the pasta according to instructions on box

add salt to your pasta water until it tastes like the ocean! not kidding.  it's alot, but it makes the pasta REALLY good.

cut up chicken into small-medium sized pieces.
cook chicken in about a tablespoon of EVOO (extra virgin olive oil) on medium to high heat.
add your garlic.
while chicken is cooking, chop up your basil and your sundried tomatos and set aside.
once chicken is no longer pink on the outside add your sundried tomatos.
stir for about 2 minutes.
add basil.
add your cream and butter and stir together.  let cook for about 2 minutes stirring occasionally.
by this time your pasta should be about done.  stir it into the chicken and sauce.

add salt and pepper to taste and ta-da, you have an AMAZING meal!

    do you know what the difference is between regular olive oil and evoo? i never do!
