new friends // meet brittany

when people ask me why i blog, i simply tell them "it's because of the amazing women i meet".  it's not about the money, or the followers, or even about the writing to me.  (ok so writing does have alot to do with it).  but honestly i have met so many amazing bloggers that i have gotten to know very closely, and many of them we have become good friends.  
well today i want to introduce you to a new friend of mine:

#bitches be crazy

it's my favorite time of year again.  that time where i get to watch one man date 20 women at the same time while he finds his perfect match.  hells yeah!!!
so i didn't do a bachelor recap last week, well because nothing exciting really happened... i was bored.  nobody got drunk and fell down a flight of stairs, and nobody tried to tie juan pablo up like a fifty shades of grey novel...
so anyway my glass of wine and i sat down last night to watch the second episode of this seasons "bachelor".
let's start from the beginning.  our sweet little hair dresser clare gets the first one on one date with jaun.  just as you would imagine, the date is a fairy tale.  it's a snowy wonderland complete with a hot tub and private concert.  aweeeee so sweet.

in the mean time back at the house, lucy decides that wearing a bikini top is not an option.  she bares all!  not surprised at all.

so anyway the next girl chosen for the one on one date with juan is none other than the fabulous kat.  they get in a private jet bound for where??  could it be the beaches of miami, or the busy streets of nyc?  well those two fantasies went out the window when juan pablo has kat put on flashing neon running attire.  still confused?  well after landing in salt lake city, kat finds out that her prince has chosen a very unique date.  a 5k...
ok so this isn't your usual 5k.  it's complete with loud music, lights, and neon glow sticks.  sounds kind of fun i guess... if i were going on a date with my bff.
but whatever floats your boat i guess.

now things get a little weird.
it's time for the first group date.
a sexy photo shoot with... hold up... DOGS!  WTF?!?
i'm all for a sexy photo shoot and all, but with dogs?  i mean i know it was for a good cause, but come on!  that's just odd.
so after the "sexy" photoshoot, the group date continues on top of a building with a rooftop pool and hot tub overlooking the city. they start having some drinks and chit chatting and getting their one on one time with juan when all of a sudden...
this girl is wassssted!

poor victoria...
after making a huge scene, crying like a 15 year old, and threatening to leave... she gets sent home.
sorry sweetie, maybe you should stay away from the wine.

drama drama drama

and it's time for the rose ceremony.
before things get started, cassandra (who we find out earlier in the episode has a son) gets a little teary eyed because she's stressed, not knowing if this is the right thing for her, and missing her little boy :( sad day!
but juan pablo comes to the rescue and makes her feel better, because if anyone knows what it's like to miss their little one, it would be juan ;)

so on to the ceremony...
clare, kat, and dog lover (kelly) all have roses.
surprise, surprise cassandra's little "i'm sad" spell wins her the first rose.
everyone except for amy and chantel get a rose (i thought amy was adorbale, but who the hell is chantel? )... sorry girls but it's time to go :(

taste of tuesday // healthy chicken fried rice

who doesn't love a good bowl of chicken fried rice?? i know i do!  but ordering it from a take out restaurant can take way too long, and not to mention it probably isn't the healthiest thing for you.
so i have come up with a delicious alternative for one of my favorite comfort foods.  check it out!

what you'll need
2 boneless skinless chicken breasts (cut into small pieces)
1 carrot chopped
1 1/2 cups of broccoli chopped
1 clove of garlic
2 tablespoons of finely chopped onion
2 tablespoons of low sodium soy sauce
1 tablespoon of teriyaki sauce
1 egg (optional)
2 tablespoons of olive oil
1 cup of brown rice
1 cup of quinoa

cook rice and quinoa in separate pots according to directions on box. (i cook mine in low sodium chicken broth to give it some flavor)
while rice and quinoa are cooking, heat 1 tablespoon if olive oil over medium heat in a large frying pan or wok.
add carrots, broccoli, garlic and onion and stir fry for 2-3 minutes until tender.
add chicken and stir fry for 1-2 minutes.
add 1 tablespoon of soy sauce and stir.
cook for an additional 2-3 minutes and add rice and quinoa 1 cup at a time.
after rice and quinoa are added, make a small hole in the middle of your wok or frying pan.  crack 1 egg (optional) into the center and cook until done.  chop up egg and stir it into the rest of the mixture.
stir fry for about 1-2 minutes and add the remaining soy sauce and teriyaki sauce.
reduce heat to low and continue frying for an additional 1-2 minutes, or until chicken and veggies are done.

realistic new years resolutions

january 1st comes around once a year, and each year while i nurse my new years eve hangover i sit down with a pen and piece of paper and write down my new years resolutions.  some of them i stick to for about a month and then i fall back into my old routine.  well guys i'm tired of wasting paper.  let's save a tree and come up with some realistic new years resolutions.

1. hit snooze at least 3 times on your alarm clock each morning.
2. drink at least 3 glasses of wine each week.
3. indulge in a slice of cake at least twice a week.  pretend it's your birthday :)
4. be late for work 2 out of 5 days.
5. be less organized 
6. skip the gym for girl's night out once a week.
7. stay in your pajamas for more the majority of the day every sunday.
8. make sure to put a spoonful of whipped cream in your coffee each morning.  trust me, you'll thank me later ;)
9. watch at least 2 crappy reality tv shows each week.
10. live each day to the fullest.  smile, and laugh more.

a new year

well we've seen another year come and go.  2013 was beyond wonderful, and i'm so excited to see what the new year holds for us.  i hope you all had a fabulous new years eve!  we had a blast.  one of the best new years i've had in a long time.

the hubby and i went to atlanta to see florida georgia line in concert.  they were amazing!  and there was even a surprise appearance from colt ford.  ringing in the new year with just my hubby, florida georgia line and 5,000 screaming fans was nothing short of a good time.  i would do it again in a heartbeat :)
