taste of tuesday // healthy chicken fried rice

who doesn't love a good bowl of chicken fried rice?? i know i do!  but ordering it from a take out restaurant can take way too long, and not to mention it probably isn't the healthiest thing for you.
so i have come up with a delicious alternative for one of my favorite comfort foods.  check it out!


what you'll need
2 boneless skinless chicken breasts (cut into small pieces)
1 carrot chopped
1 1/2 cups of broccoli chopped
1 clove of garlic
2 tablespoons of finely chopped onion
2 tablespoons of low sodium soy sauce
1 tablespoon of teriyaki sauce
1 egg (optional)
2 tablespoons of olive oil
1 cup of brown rice
1 cup of quinoa

directions
cook rice and quinoa in separate pots according to directions on box. (i cook mine in low sodium chicken broth to give it some flavor)
while rice and quinoa are cooking, heat 1 tablespoon if olive oil over medium heat in a large frying pan or wok.
add carrots, broccoli, garlic and onion and stir fry for 2-3 minutes until tender.
add chicken and stir fry for 1-2 minutes.
add 1 tablespoon of soy sauce and stir.
cook for an additional 2-3 minutes and add rice and quinoa 1 cup at a time.
after rice and quinoa are added, make a small hole in the middle of your wok or frying pan.  crack 1 egg (optional) into the center and cook until done.  chop up egg and stir it into the rest of the mixture.
stir fry for about 1-2 minutes and add the remaining soy sauce and teriyaki sauce.
reduce heat to low and continue frying for an additional 1-2 minutes, or until chicken and veggies are done.
